Natalie Morales Asian Turkey Meatballs

Ingredients

  • Sauce
  • 3 TBSPS dark brown sugar
  • ½ cup soy sauce
  • ½ cup sake
  • 2 TBSPS minced fresh ginger
  • 1 tsp toasted sesame oil
  • Pinch of red pepper flakes
  • 1 green onion, thinly sliced
  • Meatballs
  • Nonstick cooking spray
  • 1 lb. 93% lean ground turkey
  • ¾ cup panko bread crumbs
  • ¼ cup chopped fresh cilantro
  • 1 large egg, beaten
  • 2 green onions, chopped
  • 2 garlic cloves, minced
  • 1 TBSPS soy sauce
  • 1 tsp toasted sesame oil
  • Pinch of freshly ground black pepper
  • 1 TBSP sesame seeds, for serving

Directions

  1. Make the sauce: In a small saucepan, combine ⅓ cup water and the brown sugar, stirring over medium heat until the sugar dissolves.
  2. Add the soy sauce, sake, ginger, sesame oil, and red pepper flakes.
  3. Reduce the heat to medium-low and gently simmer until the liquid has reduced by half, about 20 minutes.
  4. Set aside and stir in the green onion just before serving.
  5. Make the turkey meatballs: Preheat the oven to 400°F.
  6. Coat a large baking sheet with nonstick spray.
  7. In a large bowl, mix the turkey, bread crumbs, cilantro, egg, green onions, garlic, soy sauce, sesame oil, and black pepper.
  8. Using wet hands to prevent sticking, roll the mixture into mini meatballs about 1½ inches in diameter.
  9. Place the meatballs on the prepared baking sheet and bake until thoroughly browned and cooked through, 7 to 8 minutes per side. Transfer to a platter.
  10. When ready to serve, drizzle the meatballs with the sauce and sprinkle with the sesame seeds. Serve with toothpicks
