Nasi Lemak

This is an all time favourite Malaysian dish. It is commonly eaten for breakfast but works fine for lunch or dinner. Nasi means rice and lemak is actually fats! The rice is basically cooked in coconut milk rendering it to be a filling and fattening dish. It is a complete meal when served with condiments such as ikan bilis sambal, fried dried anchovies, peanuts, boiled eggs and cucumber. To make it more fancy, fried chicken/fish, prawn or squid sambal can be served with it.

Ingredients

  • For the Rice:
  • 2 cups rice - washed & drained
  • Coconut Milk
  • Water
  • 3 Pandan leaves - knotted
  • 3 tbsp sugar
  • Salt to taste
  • Ikan Bilis Sambal:
  • 1 cup dried anchovies
  • 1 big onion - sliced
  • 1 tomato - sliced
  • 2 tsp ginger & garlic paste
  • 3 tbsp sambal paste (blended from dried red chillies and garlic)
  • Sugar & Salt to taste
  • Condiments:
  • 1/2 cup fried dried anchovies
  • 1 cucumber - halved & sliced
  • 2 -3 eggs - boiled & quartered
  • 1/2 cup roasted peanuts
  • Optional: prawn sambal/fried chicken

Directions

  1. Rice:
  2. Place the washed rice in a rice cooker with enough coconut milk and water.
  3. Add the pandan leaves for fragrance & flavour, sugar and salt. Cook till rice is done.
  4. Ikan Bilis Sambal:
  5. Fry the anchovies and set aside.
  6. In the same oil, fry onions, giner & garlic paste and tomatoes and add bout 3/4 cup of water.
  7. Then add the sambal paste, salt and sugar to taste. Let it boil then add in the anchovies and cook the sambal till oil appears and the gravy thickens.
  8. Optional: Prawn Sambal:
  9. Same method as above except you add some chopped garlic and add the prawns later as they cook a lot faster.
  10. Finally, display all the items on a plate and serve hot as shown in the picture
