These are very good! Due to health issues I have been eating differently. This recipe has no dairy. The flax meal in water is the substitute for eggs. These muffins have both good flavor and loft of the batter without the eggs. You can find how to make ghee out of unsalted butter on the internet. I use this for many things now! And it does not burn on, and it tastes so good. It has made a difference in that since using ghee I am losing inches. This is explained when you look up the benefits of ghee. I feel there is truth in what is written due to what I am expereincing. My fat is different all over and less of it. I use the rice milk in recipes and it is working well.

Directions

  1. Put dry ingredients in bowl: 1 1/2 cup spelt flour, 1/2 bran flakes, 1/2 tsp sea salt, 2 tsp Baking Powder.
  2. Next, wet ingredients: 1/2 cup maple syrup, 2 tablespoons flax meal in small bowl with 6 table spoons of water. (For every tablespoon of flax it is 3 tablespoons of water to equal one egg.) I used a rounded tablespoon of ghee by using a large soup spoon from my silverware rather than dirty the measuring spoon. But in eye balling it, about a tablespoon rounded.
  3. Other ingredients: 1 cup raisins, 1/2 cup pecans and a splash of rice milk. Enough to have good moisture in batter. Batter is like wet buscuit dough. Keep in mind that bran loves moisture and the reason to add a splash of rice milk.
  4. Note: I am using coconut oil to grease my muffin tins. This works very well as it is solid like Crisco without being Crisco. Your foods will not tast like coconut. Be aware that some people can be alergic to coconut. I am not sure if this is a problem or not.
