Mussels In Garlic Butter

Ingredients

  • 3/4 c. Softened sweet butter
  •     Juice of 1/2 lemon
  •     Grated peel of 1 lemon
  • 1/3 c. Chopped fresh parsley
  • 4 x Crushed garlic cloves
  • 3 Tbsp. Chopped shallots
  •     White pepper
  •     Nutmeg
  • 4 x Dz mussels, well scrubbed,
  •     Steamed & cooled

Directions

  1. Combine butter with lemon juice, lemon peel, parsley, garlic & shallots; season to taste with pepper & nutmeg. Combine butter-herb mix in food processor fitted with steel blade; process till well blended. Arrange mussels, in their shell halves, in shallow individual baking dishes; spread each with some mix; run under warm broiler 2-3 min, watching carefully. Or possibly bake in 425 oven for 10 min or possibly till bubbly.
