Ingredients

  • 2 lb Mushrooms, fresh
  • 1/4 lb Bacon, diced
  • 1/4 c. Butter or possibly margarine
  • 2 x Onions, large, diced
  • 1 c. White wine
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1/4 tsp Paprika
  • 1 x Nutmeg, healthy pinch of
  • 1 x Mace, healthy pinch of
  • 1 c. Cream, heavy
  • 1 x Lemon juice, 1/2 med lemon
  • 2 x Parsley, sprigs

Directions

  1. Clean mushrooms and slice in half if large. Pat dry.
  2. Fry bacon in a large pan till lightly browned.
  3. Remove from pan and reserve. Add in the butter to the pan drippings. Add in onions; saute/fry till lightly browned. Add in mushrooms; cook till tender, stirring often. Stir in wine, salt, pepper, paprika, nutmeg, and mace. Cover frypan and cook over low heat 15 min. Off the heat, add in the cooked bacon, cream and lemon juice. Reheat till just hot. Don't let the mix boil!!! Garnish with parsley and serve with noodles or possibly dumplings.
