Mushroom Nasi Goreng With Fried Egg Recipe

Ingredients

  •     groundnut or possibly sunflower oil for frying
  • 6 sm shallots sliced lengthways
  • 1 stk lemon grass smashed open but left in one piece
  • 4 clv garlic finely sliced
  • 2 Tbsp. dry whole shrimp soaked in water till soft and liquid removed (optional)
  • 1 tsp shrimp paste or possibly 1 tbsp fish sauce
  • 3 lrg mild red chillies deseeded and minced
  • 1 Tbsp. sweet chilli sauce
  • 1/2 Tbsp. kecap manis or possibly 1 tbsp dark soy sauce
  • 200 gm wild button or possibly small shiitake mushrooms trimmed
  • 250 gm longgrain rice cooked and cooled at least 2 hrs before using
  • 4 x freerange Large eggs (optional)

Directions

  1. Heat 2 tbsp oil in a wok or possibly large frying pan and fry the shallots (keeping a couple raw for serving) lemon grass garlic and shrimp (if using) till the shallots have frazzled at the edges then add in the shrimp paste (or possibly fish sauce) and chilli and fry for a further 30 seconds. Add in the sweet chilli sauce and kecap manis (or possibly dark soy sauce) and splutter together for a fiirther 30 seconds.
  2. Neat add in the mushrooms and rice and stirfly for about 3 min till it reaches a good deep colour. Meanwhile fry the Large eggs (if using) keeping the yolks soft.
  3. Divide the rice between warned serving bowls top each portion with the reserved shallots and a fried egg and eat with chopsticks.
  4. Nasi goreng is actually an allday dish in Indonesia. Go to these spice islands and it's on every street hawker's menu.
  5. Simply it's fried rice. But you can make it as busy as you want. It's a good one to sling in all the tasty bits left over from the previous day's. And it's best made with dayold rice.
  6. You can cheerily add in to or possibly subtract from this one depending on what you have lurking in the fridge: try minced spring onion chives coriander and basil leaves prawn crackers prawns shredded cooked meat or possibly hardboiled Large eggs or possibly a stack of stirfried vegetables tossed with toasted peanuts. Mine's a brunch version.
