A colourful and simple pasta dish that is made from wheat pasta which is more healthier and packed with fresh ingredients and the simplest seasoning. Al dente means cooked firm but not hard (easy to the bite).

Directions

  1. Cook the pasta in salted hot water.
  2. Heat olive oil in a pan and stir in the rest of the ingredients but keep half the chopped tomatoes and some parsley for final tossing.
  3. Let the mushroom cook and by then your pasta should be ready (al dente) and toss the pasta in this mixture and season with salt and pepper. Add the balance tomatoes and parsley and let it cook further for about 1-2minutes.
  4. Serve warm or at room temperature.

    I'm not big on mushrooms...but this was pretty good. It was simple and went really well with the salmon. And my daughter and son ate it....well they ate the pasta anyway...
    I've cooked/tasted this recipe!
