Multivitamin Salad

Two weeks ago I kept a raw week diet in order to cleanse my body because I felt terribly guilty after eating a lot of crap (meat free though) in the mini-vacation at the seaside. It was a great week during which I filled my body with a bundle of vitamins and minerals, although it was a bit annoying that I didn’t have much time for cooking and all I ate was salads. This salad was made by my boyfriend/acolyte who I am desperately trying to convince that meat is bad! :)). Anyway, it was amazingly tasty and filling.

Ingredients

  • Ingredients:
  • • 2 small beets
  • • 2 medium onions
  • • 2 carrots ( unpeeled , all the vitamins are in the peel)
  • • 3 cucumbers (unpeeled)
  • • 2 medium tomatoes
  • • 1 tbs dry parsley
  • • a handful of fresh parsley
  • • a pinch of curry
  • • 1 tsp dry thyme
  • • 1 tsp dry oregano
  • • 1 tsp dry rosemary
  • • ½ tsp ground pepper
  • • 1 tbs fresh dill
  • • 3-4 fresh basil leaves ( or more if you want)
  • • 3-4 fresh sage leaves
  • • Half a lemon’s juice
  • • 3-4 tbs unrefined corn oil (this oil gives the salad an amazing aroma)
  • • ½ tsp salt

Directions

  1. All dry herbs are optional, it is a lot better with them but if you miss an ingredient it’s no biggie :). Also if you have them fresh it’s a lot better.
  2. Rinse all the fresh ingredients. Peel the beets and onions. Grate all the vegetables except the tomatoes. Chop the tomatoes in any size you wish ( I personally don’t like them chopped too small, I sliced them). Add all the other ingredients and blend together. It’s delicious! You can almost feel how your body is filled with vitamins :)
