Mom's Yeast Rolls (Dble. Quick Batter Rolls)

Ingredients

  • 1 c. Hot water (110)
  • 2 1/4 c. Sifted flour
  • 1 pkt Active dry yeast
  • 1 x Egg
  • 2 Tbsp. Sugar
  • 2 Tbsp. Soft shortening
  • 1 tsp Salt

Mom's Yeast Rolls (Dble. Quick Batter Rolls)

Directions

  1. In mixing bowl, dissolve yeast in water. Stir in sugar, half the flour, and salt; beat with spoon till smooth. Add in Large eggs and shortening; beat in rest of flour till smooth. Scrape sides of bowl. Cover with cloth. Let rise in hot place (85 degrees) till double in bulk, about 30 min. Grease 12 large muffin c.. Stir down raised dough. Spoon into muffin c., filling 1/2 full. Let rise in a hot place till dough reaches top of muffin c., about 20-30 min. Heat oven to 400 degrees. Bake 15-20 minutes.
