Mom's No Bake Cookies

My mom used to make these all the time when my sister and I were young. She used to help her mother make them for the family when she was a kid. She made the regular version as well as a version with the addition of peanut butter. They have become my go-to sweet tooth cure as they are so easy and quick to make.

I recently made a variation of these adding chopped pecans (see picture). I've had other versions, from friends and co-workers, where they were made using melted chocolate instead of cocoa, but they weren't chewy...they were more like a chocolate candy bar consistency.

Ingredients

  • 1 ½ c. granulated sugar
  • 1/3 c. Dutch-processed cocoa
  • Pinch of salt
  • 1/3 c. butter
  • 6 oz. evaporated milk
  • 1 ½ c. shredded or flaked coconut
  • 2 c. quick oats

Directions

  1. Whisk together the sugar, cocoa and salt. Combine all ingredients together, except the coconut and oats, in a medium saucepan; start cooking the mixture over medium heat. Allow the mixture to cook for 5-7 minutes, stirring occasionally.
  2. Remove from the heat and add the coconut; stir until blended. Add the oats; stir until well blended. Drop by tablespoonfuls onto waxed paper. Allow to cool at room temperature. Once cooled, I place them in decorative muffin/cupcake papers and store them in an airtight container. *If you like a softer texture to the oatmeal, you can add it to the mixture during the last 2 minutes of cooking (Step 1).
  3. VARIATIONS: Peanut butter (add approx. 1/3 c. to mixture while cooking), raisins, cranberries or Craisins,* nuts,* other chopped dried fruits* (*You might need to decrease the amount of coconut when adding these variations).
