%20has%20made%20all%20the%20difference.%3C/p%3E%3Cp%3EThere%20are%20a%20number%20of%20other%20benefits%20to%20pitta%20bread,%20as%20I've%20discovered.%20%20For%20instance,%20there's%20very%20little%20on%20this%20earth%20that%20can't%20be%20put%20into%20one%20for%20a%20yummy%20and%20fairly%20portable%20lunch.%20%20Everything%20from%20steak%20and%20chips,%20through%20stew,%20to%20trifle%20can%20be%20contained%20in%20a%20pitta%20bread.%20%20Although%20why%20anyone%20would%20want%20to%20put%20trifle%20in%20a%20pitta,%20is%20another%20matter.%20%20Anyway%20-%20I%20do%20think%20that%20soup%20is%20really%20the%20only%20thing%20that%20won't%20go%20into%20a%20pitta%20bread%20-%20but%20you%20can%20dip%20your%20pitta%20bread%20into%20soup,%20so%20it%20still%20wins!%3C/p%3E%3Cp%3EPitta%20bread%20is%20also%20self-limiting,%20quantity%20wise.%20%20As%20an%20example,%20I%20was%20making%20scrambled%20egg%20to%20go%20in%20my%20pitta%20this%20morning.%20%20As%20I%20was%20just%20scrambling%20the%20one%20egg,%20I%20used%20just%20the%20one%20pitta.%20%20Now%20had%20I%20have%20been%20making%20scrambled%20egg%20on%20toast,%20I%20might%20have%20felt%20I%20should%20just%20use%20the%20one%20slice%20of%20bread%20-%20but%20you%20could%20guarantee%20that%20I'd%20have%20put%20two%20into%20the%20toaster%20because%20of%20habit.%20%20With%20pitta,%20just%20one%20comes%20out%20of%20the%20packet%20at%20a%20time%20and%20just%20one%20does%20the%20job%20with%20no%20reason%20to%20feel%20hard%20done%20by.%3C/p%3E%3Cp%3ECreamy,%20minty,%20mustardy%20-%20what's%20not%20to%20like?The%20whole%20butter%20question%20is%20another%20thing%20that%20is%20improved%20by%20the%20use%20of%20pitta%20bread.%20%20With%20a%20sandwich,%20you%20would%20butter%20both%20slices%20of%20bread.%20%20Not%20so%20with%20a%20pitta.%20%20Very%20often%20it%20isn't%20necessary%20to%20use%20butter%20at%20all%20-%20but%20if%20you%20do,%20then%20just%20butter%20the%20one%20side%20and%20the%20job%20is%20done%20with%20half%20the%20amount.%20%20How%20good%20is%20that?%3C/p%3E%3Cp%3EWith%20regard%20to%20quantity,%20putting%20a%20whole%20bucket%20load%20of%20salad%20into%20a%20sandwich%20just%20results%20in%20your%20having%20to%20use%20two%20hands%20to%20hold%20the%20whole%20collapsing%20mess.%20%20Not%20so%20with%20a%20pitta.%20%20Jam%20the%20salady%20loveliness%20in%20there%20as%20hard%20and%20fast%20as%20you%20can!%20%20You%20might%20need%20two%20hands%20as%20you%20go,%20but%20only%20because%20of%20the%20sheer%20weight%20of%20health%20giving%20salad%20inside%20your%20cheese%20or%20egg%20pitta.%20%20*wink*%3C/p%3E%3Cp%3ESo,%20when%20we%20picked%20up%20a%20little%20pack%20of%20fresh%20lamb's%20liver%20from%20the%20Ferndene%20Farm%20Shop%20at%20Bashley,%20Hampshire%20the%20other%20day,%20it%20got%20me%20wondering%20what%20to%20do%20with%20it.%20%20Naturally,%20%22put%20it%20in%20a%20pitta%22%20was%20right%20up%20there%20as%20a%20suggestion.%3C/p%3E%3Cp%3EI%20was%20in%20two%20minds%20whether%20to%20go%20down%20the%20%22devilled,%20mustardy%22%20route%20with%20it,%20or%20the%20%22redcurrant%20and%20rosemary%22%20route.%20%20They%20both%20seemed%20as%20enticing%20as%20one%20another,%20but%20I%20could%20tell%20from%20the%20way%20my%20mouth%20was%20watering%20at%20the%20idea%20of%20the%20mustardy%20version,%20that%20this%20was%20the%20one.%3C/p%3E%3Cp%3EI%20love%20mint%20sauce%20with%20lamb%20and%20felt%20that%20just%20the%20mustard%20sauce%20wasn't%20going%20to%20be%20quite%20enough.%20%20I%20didn't%20have%20any%20fresh%20mint%20(the%20awful%20weather%20has%20terminated%20our%20mint%20plant's%20delusions%20of%20grandeur)%20but%20suddenly%20remembered%20putting%20mint%20sauce%20onto%20cooked%20new%20potatoes%20and%20how%20good%20that%20is.%20%20So,%20if%20I%20use%20Dijon%20mustard%20for%20its%20piquancy,%20then%20add%20a%20little%20mint%20sauce%20for%20the%20sweet/sour%20thing%20it%20brings%20with%20it,%20hmmmn.%20%20What%20can%20I%20use%20to%20lengthen%20and%20de-intensify%20the%20sauce%20with?%20%20Aha!%20%20I've%20a%20teensy%20tiny%20bit%20of%20double%20cream%20in%20the%20fridge%20looking%20for%20a%20home.%20%20Perfect!%20%20And%20it%20was.%20%20The%20cream%20-%20only%20a%20dessertspoonful%20at%20the%20most%20-%20was%20sufficient%20to%20just%20saucify%20(is%20that%20a%20word?%20%20If%20not,%20it%20ought%20to%20be)%20all%20the%20lovely%20flavours.%3C/p%3E%3Cp%3EMy%20friend%20Suzy%20Bowler%20entitled%20her%20brilliant%20food%20blog%20%22Sudden%20Lunch%22%20and%20I%20had%20her%20in%20mind%20all%20the%20time%20I%20was%20making%20this%20lunch,%20as%20apart%20from%20a%20little%20thought,%20it%20came%20together%20in%20a%20twinkling.%3C/p%3E%3Cp%3EMINTY%20MUSTARD%20LAMB'S%20LIVER%20PITTA%20BREAD%20%20%20%20(serves%201)%3C/p%3E%3Cp%3EIngredients%20:%3C/p%3E%3Cp%3E1%20pitta%20bread%3C/p%3E%3Cp%3Esmall%20handful%20of%20rocket%20leaves.%3C/p%3E%3Cp%3EMethod%20:%3C/p%3E%3Cp%3E1.%20%20First%20of%20all,%20put%20your%20pitta%20bread%20in%20the%20toaster%20-%20put%20it%20in%20diagonally%20(or%20as%20diagonally%20as%20you%20can%20muster)%20so%20that%20as%20much%20as%20possible%20of%20it%20sees%20the%20heat.%20%20Once%20toasted,%20split%20down%20one%20side%20and%20turn%20your%20attention%20to%20the%20liver.%3C/p%3E%3Cp%3E2.%20%20Heat%20a%20little%20rapeseed%20oil%20in%20a%20frying%20pan%20and%20chuck%20in%20the%20liver%20pieces.%20%20Fry%20hard%20and%20fast%20-%20I%20like%20mine%20to%20have%20completely%20stopped%20bleeding,%20but%20I%20know%20there%20are%20others%20who%20can%20cope%20with%20a%20little%20red%20stuff,%20so%20it's%20up%20to%20you%20how%20long%20to%20cook%20it%20for.%20%20A%20few%20seconds%20before%20finishing%20and%20adding%20the%20sauce%20ingredients,%20throw%20on%20a%20little%20sea%20salt%20and%20a%20lot%20of%20black%20pepper.%20%20Then%20turn%20off%20the%20heat%20and%20leaving%20the%20pan%20on%20the%20hot%20plate,%20add%20a%20teaspoonful%20of%20Dijon%20mustard,%20half%20a%20teaspoonful%20of%20mint%20sauce%20and%20a%20dessertspoonful%20of%20double%20cream.%20%20Stir%20to%20combine.%20%20Pack%20the%20rocket%20leaves%20into%20the%20pitta%20and%20pour%20in%20the%20liver%20mix.%3C/p%3E%3Cp%3EI%20can%20recommend%20either%20something%20tangy%20to%20drink%20with%20it,%20or%20a%20nice%20big%20mug%20of%20tea%20or%20coffee.%20%20Mmmmn,%20glorious!%3C/p%3E){kind=link}
