Mint Squares

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup margarine, melted
  • 1/3 powder sugar
  • 1/4 tsp. salt
  • 1/4 cup Dutch-processed cocoa
  • 2 (8 oz.) cream cheese, softened
  • 1 (15 oz.) sweetened condensed milk
  • 2 tsp. lemon juice
  • 3 eggs
  • 1 tsp. vanilla extract
  • 1/2 cup York mint patties, chopped
  • 1 (8 oz.) cool whip
  • 1/2 cup Andes baking chips
  • 5 drops green food coloring

Mint Squares

Time: 25 minutes prep, 10 minutes cook
Servings: 20
 

Directions

  1. Crust: Beat flour, margarine, sugar, salt & cookies together.
  2. Pour 1/2 of crust mixture into a 13 x 9 x 2 inch baking pan. Bake at 350 degrees for 10 minutes.
  3. Cool completely.
  4. Filling: Beat cream cheese, sweetened condensed milk & lemon juice together until creamy. Add eggs, York mint patties and vanilla extract until blended.
  5. Spread over the crust layer.
  6. Topping: Mix tool whip, Andes baking chips & green food coloring until blended.
  7. Spread over the filling layer.
  8. Decorate.
