Mini Cheese Cakes Recipe

Ingredients
- Nabisco Vanilla Wafer Cookies
- 8 ounce. Philadelphia cream cheese
- 1/4 c. + 2 tbsp. sugar
- 1 egg
- 1 1/2 teaspoon lemon juice
- 1/4 teaspoon vanilla
Directions
- Put one vanilla wafer (round side up) in paper bake c.. Top with above mix (about 1/2 full), mixed really smooth. Bake at 350 degrees for 15 to 20 min. Cold.
- Top with pie filling. 1 can pie filling will cover about 1 1/2 dozen. The above recipe will make 1 dozen cheese cakes.
