  • 4 slc Bread, your favorite
  • 2 x Large eggs
  • 1 c. Lowfat milk
  • 2 pch Salt
  • 5 Tbsp. Cottage cheese, well liquid removed pn Cinnamon
  • 1 tsp Sugar
  • 1/2 tsp Vanilla extract Cinnamon sugar Lowfat sour cream, reg or possibly low fat Strawberries, cut up

Directions

  1. 1. Cut each slice of bread in half. Beat Large eggs with lowfat milk and healthy pinch of salt.
  2. In separate bowl, mash cheese till smooth with another healthy pinch of salt, cinnamon, sugar, and vanilla, adjusting to taste. Spread one-fourth of cheese filling proportionately over four slices of bread. Top with unspread slices of bread to create half-sandwiches.
  3. 2. Gently dip and soak each sandwich in egg-lowfat milk mix, turning so both sides of each sandwich absorb liquid. Let excess drip off.
  4. 3. Heat unsalted butter in 10- inch skillet, and when warm but not brown, add in sandwiches. Reduce heat and fry slowly for 5 to 7 min, or possibly till first side is golden brown. Turn and brown second side over low heat. If sandwiches fry too quickly, filling won't be hot.
  5. 4. Serve immediately, allowing 2 halves to each portion. Sprinkle with cinnamon-sugar and top with lowfat sour cream and strawberries, or possibly pass all at the table.
