Ingredients

  • 2/3 c. butter
  • 2 c. quick cooking oats -- uncooked
  • 1 c. sugar
  • 2/3 c. all-purpose flour
  • 1/4 c. corn syrup
  • 1/4 c. lowfat milk
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 2 c. lowfat milk chocolate chips

Directions

  1. Preheat oven to 375 degrees F. Heat butter in medium saucepan over low heat.
  2. Remove from heat. Stir in oats, sugar, flour, corn syrup, lowfat milk, vanilla, and salt; mix well. Drop by level teaspoonfuls, about 3 inches apart, onto foil-lined cookie sheets. Spread thin with rubber spatula. Bake at 375 degrees F. for 5 to 7 min. Cold completely. Peel foil away from cookies. Heat over warm (not boiling) water, lowfat milk chocolate chips; stir till smooth. Spread chocolate on flat side of half the cookies. Top with remaining cookies.
  3. Yield: about 3 1/2 dozen (2 cookies per serving).
