Mildly Spiced Indonesian Chicken Soup Recipe

  • 1 1/2 lt Water, (2 1/2 pints)
  • 1 sm Chicken, cut into 4
  • 1 tsp Salt
  • 6 x Shallots or possibly 1 large onion, minced
  • 3 x Garlic cloves, minced
  • 2 1/2 x Cm, (1inch) piece of fresh ginger, peeled and minced
  • 3 x Candlenuts or possibly 5 blanched almonds, minced
  • 1/4 tsp Turmeric
  • 1/2 Tbsp. Groundnut or possibly extra virgin olive oil
  • 2 Tbsp. Warm water
  • 4 Tbsp. Cooked rice, (optional) (4 to 5)
  • 125 gm Bean sprouts rinsed, (4oz)
  • 1 Tbsp. Minced spring onion
  • 4 x Lemon slices, (4 to 8)
  • 2 Tbsp. Goreng Bawang, (crispy fried shallots)

Directions

  1. Heat the water in a large pan till it is boiling. Put in the chicken pcs and the salt. Simmer for 50 min.
  2. Put all the ingredients for the paste into a blender and blend for a few seconds only. Transfer this rough paste into a bowl and keep aside.
  3. When the meat is cooked, strain off the stock from the pan and keep if for later. When cold sufficient to handle, shred the meat into small pcs, and throw away any fat but keep the bones.
  4. Put the paste from the bowl into a clean saucepan, heat and stir all the time for 3 min. Add in the chicken bones and half of the stock. Cover the pan and let it simmer for 15 min.
  5. Strain the stock into another saucepan, and add in the other half of the stock. Simmer the stock for 15 min, skimming if necessary.
  6. Put in the chicken meat and continue to simmer for another 5 min.
  7. Adjust the seasoning.
  8. To serve, if this is to be a one-dish meal, put some boiled rice into the bowls. Divide the garnish (except the fried shallots) among the bowls, then ladle the warm soup and the chicken pcs into them. Sprinkle each bowl with fried shallots, and serve immediately.
