Mild Blackened Catfish

I made this mild version of blackened catfish for my family. The dish turned out perfect for my kids, and my husband and I added extra cayenne pepper at the table to our liking. I thought it turned out quite well. I hope you'll agree!

Ingredients

  • 3/4 teaspoon cayenne pepper
  • 3 teaspoons lemon pepper
  • 3 teaspoons garlic powder
  • 1 1/2 teaspoons salt
  • 3 teaspoons pepper
  • 3 pounds catfish fillets
  • 2 tablespoons butter
  • 3/4 cup Italian-style salad dressing (I used Bernstein's)

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a shallow, medium bowl, mix cayenne pepper, lemon pepper, garlic powder, salt and pepper.
  3. Brush both sides of catfish fillets with butter. Rub fillets with the cayenne pepper mixture on both sides.
  4. Heat a large heavy skillet over high heat until smoking hot. Add fillets, and fry approximately 2 minutes on each side, until slightly blackened.
  5. Arrange blackened fillets in a single layer in a lightly greased baking dish, and coat with the salad dressing. Bake 30 minutes in the preheated oven. Remove and serve with rice or pasta.8
