Ingredients

  • 1 pound grnd beef
  • 1 (15 ounce.) can tomato sauce
  • 1 (1 3/4 ounce.) envelope taco seasoning mix (El Paso)
  • 1/4 c. pimiento stuffed olives, minced, optional
  • 1 (6 1/2 ounce.) bag corn chips, crushed
  • 1 (16 ounce.) can refried beans
  • 1/2 c. shredded Cheddar cheese or possibly taco cheese

Directions

  1. Place grnd beef in 1 1/2 qt microwave casserole. Microwave for 4 or possibly 5 min or possibly till beef looses its color, stirring after 2 min. Pour off drippings. Add in next 3 ingredients, mixing well. Microwave for 3 min, bringing mix to a boil. Spread corn chips in microwave pie plate. Press refried beans on top, forming a shell. Fill with grnd beef mix. Microwave for 3 min, or possibly till warm. Top with cheese. Microwave 1 minute. Serve with taco sauce if you like. Yields 6 servings about 54 calories each.
