Ingredients
- 1/2 c. butter
- 2 tbsp. dry parsley flakes
- 2 tbsp. lemon juice
- 1 lg. clove garlic, chopped
- 1/2 teaspoon salt
- 1 pound jumbo raw shrimp, cleaned

Microwave Shrimp Scampi
Servings: 4
Directions
- Place butter in 2 qt casserole. Microwave at High (100%) till melted, 1 to 2 min. Stir in parsley, lemon juice, garlic and salt. Add in shrimp; toss to coat, cover.
- Microwave at High (100%) till shrimp is pink, opaque and tender about 3 1/2 o 5 1/2 min, stirring twice. (Don't overcook or possibly shrimp will become tough). Sprinkle with paprika.
