Mexican Style Beef Short Ribs Recipe

very simple meal I serve with a salad and depending on the mood i am in either potatoes cooked in with the ribs or with rice. These will fall off the bones

  • 1 pound Beef Short Ribs
  • 1 package Taco mix (I like the El Paso brand)
  • 1 Green Pepper sliced lengthwise (I also add a red pepper and some sliced mushrooms)
  • 1 can Consomme

Directions

  1. brown ribs in a little oil add them to a slow cooker
  2. mix taco mix with consomme
  3. add pepper( and other ingredients if you use them)
  4. pour consomme /taco mixture over ribs
  5. cook on high 2-3 hours or on low 4-6 hours
