Mexican Rice Tacos

Sweet savory of spices and herbs mix togther to make an Awesome family meal for Taco Friday here in my home town Norway.

Goes Well With: tortilla wraps, any mixed green salad, blue cheese topped salad

Wine and Drink Pairings: red wine, fruit diquiri, water, coconut water

Ingredients

  • 2kg Chicken (breast filllet) Baked
  • 1/2 cup Uncle Bens Rice (cooked)
  • 1 whole Sweet peppers chopped ( choose colors you Love)
  • 1 Onion chopped ( choose onion you like)
  • 1 Broccoli head seperated and cut in halfs
  • 1/2 cup of fresh cooked corn from the cob
  • 3 Big mushrooms sliced
  • 12 Taco shells

Directions

  1. (1). Put taco shells in the oven on 180 degrees for 15 mins.
  2. (2). On stove top pan with coconut oil warm up until partly hot
  3. (3). Add veggtables and taco seasoning stir together, Until all are coverd in the oil cook 8 1/2 mins
  4. (4). Next add the cooked rice to pan with vegetables add black pepper and salt to your desire stir.
  5. (5). Add chicken and stir together until they are completely mixed together, let cook for 6 1/2 mins
  6. (6) Ready to serve, Set the Taco shells and the pan with the rice mix on the Tabel self serve Enjoy.
