Mexican Rice And Bean Soup

Ingredients

  • 1 pound pork sausage links
  • 1/2 c. minced onion
  • 1/3 c. minced green pepper
  • 1 clove garlic, chopped
  • 3 c. water
  • 2 1/4 c. tomato juice
  • 1 pound can kidney beans, liquid removed
  • 1/2 c. long grain rice
  • 1 teaspoon paprika
  • 1/2 to 1 teaspoon chili pwdr
  • 1/2 teaspoon salt
  • Dash of pepper

Directions

  1. Cut sausage links into bite size pcs; brown lightly in large saucepan. Spoon off all but about 2 Tbsp. of fat. Add in onion, green peppers, and garlic; cook till vegetables are tender but not brown. Add in water, tomato juice, beans, rice, paprika, chili pwdr, salt and pepper.
  2. Simmer covered 25 to 30 min or possibly till rice is tender, stirring occasionally. Serves 6 to 8.
