.%20The%20church%20appears%20to%20be%20located%20in%20Brownsville,%20Texas,%20and%20my%20edition%20appears%20to%20be%20from%201981,%20despite%20the%201968%20inscription%20in%20the%20title.%20Perhaps%20that%20was%20the%20last%20year%20it%20was%20updated?%20Brownsville%20is%20at%20the%20south-eastern%20most%20tip%20of%20Texas,%20which%20would%20makes%20sense%20referring%20to%20both%20the%20%E2%80%9CBorder%E2%80%9D%20(Mexico)%20and%20the%20%E2%80%9CSea%E2%80%9D%20(the%20Gulf%20of%20Mexico).%20At%20any%20rate,%20I%20just%20loved%20the%20title%20of%20the%20book,%20it%20is%20so%20fanciful%20and%20evocative.%3C/p%3E%3Cp%3EAt%20almost%20400%20pages%20and%20several%20recipes%20per%20page%20in%20most%20cases,%20I%20had%20a%20lot%20to%20choose%20from.%20This%20time%20I%20went%20savory,%20eventually%20landing%20on%20the%20not%20very%20fancifully%20named%20%E2%80%9CBeef-Noodle-Sour%20Cream%20Casserole.%E2%80%9D%20%20I%20was%20attracted%20to%20the%20idea%20of%20using%20cottage%20cheese%20in%20a%20casserole,%20since%20cottage%20cheese%20is%20a%20fabulous%20low%20fat%20source%20of%20protein.%20I%20decided%20right%20away%20that%20I%20would%20be%20both%20spicing%20up%20the%20dish%20and%20adding%20lots%20of%20veggies,%20hence%20leading%20to%20the%20%E2%80%9CMexican%E2%80%9D%20in%20my%20dish%20name.%3C/p%3E%3Cp%3EWhen%20someone%E2%80%93I%20no%20longer%20remember%20who,%20someone%20on%20Facebook%E2%80%93heard%20what%20I%20was%20making%20they%20said%20%E2%80%9COh,%20you%20mean%20Pioneer%20Woman%E2%80%99s%20casserole?!%E2%80%9D%3C/p%3E%3Cp%3EHuh?%3C/p%3E%3Cp%3ESo%20of%20course%20then%20I%20went%20searching,%20and%20yes%20she%20has%20a%20casserole%20remarkable%20similar.%20Now%20this%20is%20not%20me%20making%20any%20kind%20of%20comment%20as%20to%20the%20originality%20of%20her%20cooking,%20I%20really%20want%20to%20stress%20that.%20I%20firmly%20believe%20that%20all%20recipes%20are%20built%20off%20of%20one%20another%20and%20adapted%20from%20one%20another.%20I%20don%E2%80%99t%20really%20believe%20in%20much%20true%20originality%20when%20it%20comes%20to%20cooking%20and%20baking%20if%20you%20want%20to%20know%20the%20truth.%20I%20believe%20we%20all%20learn%20from%20one%20another%20and%20adapt%20things%20to%20our%20own%20tastes%20as%20we%20go%20along%E2%80%93much%20as%20I%20did%20with%20this%20dish.%20But%20it%20was%20an%20interesting%20moment%20just%20in%20terms%20of%20how%20a%20recipe%20evolves.%20Once%20upon%20a%20time%20I%20suspect%20this%20casserole%20must%20have%20been%20pretty%20common.%20Mrs.%20E.%20Wayne%20Wilson%20donated%20the%20recipe%20to%20my%20book.%20But%20now%20it%20is%20the%20Pioneer%20Woman%20Casserole.%3C/p%3E%3Cp%3EMexican%20Pasta%20Bake%20with%20Ground%20Beef%20and%20Sour%20Cream%3C/p%3E%3Cp%3ERecipe%20type:%20Entree%20Cuisine:%20Mexican%3C/p%3E%3Cp%3EFor%20the%20sour%20cream%20mixture:%201%20cup%20full%20fat%20sour%20cream%201%20cup%202%25%20greek%20yogurt%206%20oz%20cottage%20cheese%20juice%20of%20one%20tiny%20lime%201%20t%20ground%20cumin%20For%20the%20casserole:%202%20T%20oil%203%20small%20onions,%20chopped%2016%20oz%20sliced%20crimini%20mushrooms%206-8%20garlic%20cloves,%20minced%202%20slender%20zucchini,%20diced%203%20sweet%20bell%20peppers,%20diced%202%20t%20ground%20cumin%202%20t%20ancho%20chile%20powder%201%20t%20New%20Mexico%20chile%20powder%20%C2%BD%20t%20chipotle%201%20t%20smoked%20paprika%20%C2%BD%20t%20Mexican%20oregano%20%C2%BC%20t%20thyme%202%2015-oz%20cans%20fire%20roasted%20tomatoes%201%20lb%20ground%20turkey%201%20lb%20ground%20beef%2024%20oz%20dried%20medium-small%20noodles%20(I%20prefer%20high%20fiber),%20cooked%20according%20to%20package%20directions%20to%20al%20dente%20approx.%203-4%20cups%20of%20grated%20cheddar%20and%20Monterey%20Jack%20cheese%20Tapatio%20hot%20sauce%20for%20serving%3C/p%3E%3Cp%3EWhisk%20together%20the%20sour%20cream%20mixture%20ingredients.%20Set%20aside.%20Preheat%20the%20oven%20to%20350%20F.%20Bring%20a%20pot%20of%20salted%20water%20to%20a%20boil.%20While%20you%20are%20working%20on%20the%20ground%20meat%20mixture,%20also%20cook%20and%20drain%20the%20noodles.%20Heat%20the%20oil%20in%20a%20large,%20deep%20skillet.%20When%20it%20is%20shimmering,%20add%20the%20onions%20with%20an%20pinch%20of%20salt.%20Stir%20occasionally,%20cooking,%20for%208%20minutes.%20Push%20the%20onions%20to%20the%20sides%20of%20the%20skillet%20and%20add%20half%20the%20mushrooms%20in%20the%20center%20with%20a%20pinch%20of%20salt.%20Let%20them%20brown%20for%20a%20few%20minutes,%20and%20then%20stir%20them%20into%20the%20onions.%20Once%20again%20push%20that%20mixture%20to%20the%20sides%20and%20repeat%20with%20the%20remaining%20mushrooms.%20After%20the%20mushrooms%20have%20browned,%20add%20the%20garlic.%20Cook%20for%20one%20minute.%20Add%20the%20zucchini%20and%20sweet%20bell%20pepper.%20Cook%20for%20another%206-8%20minutes,%20until%20the%20zucchini%20especially%20has%20released%20most%20of%20its%20water.%20Add%20the%20spices:%20cumin,%20ancho%20powder,%20New%20Mexico%20chile%20powder,%20chipotle,%20smoked%20paprika,%20Mexican%20oregano%20and%20thyme.%20Stir%20and%20cook%20until%20roasted%20and%20fragrant,%20about%202%20minutes.%20Add%20the%20fire%20roasted%20tomatoes%20and%20stir%20to%20incorporate.%20Bring%20to%20a%20boil%20and%20simmer%20for%202%20minutes.%20Add%20the%20ground%20beef%20and%20ground%20turkey.%20Stir%20to%20incorporate%20again.%20Cook,%20stirring%20occasionally,%20until%20the%20turkey%20and%20beef%20are%20browned%20through.%20Taste%20for%20salt.%20Grease%20your%20casserole%20dish(es).%20I%20used%204%20small%20individual%20casserole%20dishes%20plus%20one%20smaller%20casserole%20dish,%20probably%20about%207X12%20if%20I%20had%20to%20guess%20(it%20is%20an%20oval).%20If%20that%20is%20more%20than%20you%20would%20like,%20make%202%20casseroles%20and%20freeze%20one%20once%20it%20has%20cooled.%20Layer%20your%20ingredients%20into%20the%20greased%20casserole%20dish(es):%20First%20a%20thin%20layer%20of%20the%20tomato%20meat%20sauce.%20Then%20the%20noodles,%20then%20the%20sour%20cream%20cottage%20cheese%20mixtures,%20and%20then%20the%20remaining%20tomato%20meat%20mixture.%20Top%20it%20all%20off%20with%20a%20mixture%20of%20shredded%20cheddar%20and%20Monterey%20Jack%20cheese.%20Bake%20for%2020-40%20minutes,%20size%20depending,%20until%20the%20cheese%20has%20melted%20and%20the%20tomato%20meat%20mixture%20is%20bubbling.%20If%20you%20use%20a%20single%20particularly%20large%20casserole%20dish,%20I%20recommend%20covering%20it%20for%20the%20first%2020%20minutes%20to%20allow%20the%20inside%20to%20heat%20without%20potentially%20burning%20the%20cheese.%20Serve%20with%20Tapatio%20hot%20sauce%20(or%20your%20favorite%20Mexican%20style%20hot%20sauce)%20on%20the%20side.%20%203.2.2704%3C/p%3E%3Cp%3Ebeef,%3C/p%3E%3Cp%3Ecasserole,%3C/p%3E%3Cp%3Ecommunity%20cookbook,%3C/p%3E){kind=link}
