Directions

  1. Combine sweet potatoes, sugar, salt, cinnamon and nutmeg. Beat egg yolks; add in with butter to potato mix. Mix well. Add in lowfat milk and combine. Beat egg whites stiff but not dry; fold into the mix. Pour into unbaked pie shell. Bake in warm oven (425 degrees) for 15 min. Reduce heat to moderately warm (375 degrees) and bake 25 min longer, r or possibly till hard. Cold. Makes 6 servings.
