Mediterrean Wheat Penne Pasta with Zucchini-Red Bell Pepper-Garlic Lemon Cold Dressing

Ingredients

  • 8 ounces Wheat Penne Pasta
  • Pinch of Salt for Pasta Water
  • 1/4 cup diced Zucchini
  • 1/4 cup diced Red Bell Pepper
  • 1/2 cup Feta Cheese Crumble
  • 2 tablespoons fresh chopped basil
  • one lemon juice only
  • 1 teaspoon minced garlic
  • 2 tablespoon Olive Oil
  • 1 tablespoon white vinegar
  • Salt and Black pepper, to taste

Directions

  1. Boil pasta (as per package instructions), add salt to water
  2. Drain pasta and place into a mixing bowl
  3. Add diced zucchini, red bell pepper, stir gently
  4. Add remaining ingredients, cover and chill one hour before serving
  5. Toss gently when plating.
