- 8 ounces Wheat Penne Pasta
- Pinch of Salt for Pasta Water
- 1/4 cup diced Zucchini
- 1/4 cup diced Red Bell Pepper
- 1/2 cup Feta Cheese Crumble
- 2 tablespoons fresh chopped basil
- one lemon juice only
- 1 teaspoon minced garlic
- 2 tablespoon Olive Oil
- 1 tablespoon white vinegar
- Salt and Black pepper, to taste

Mediterrean Wheat Penne Pasta with Zucchini-Red Bell Pepper-Garlic Lemon Cold Dressing
Time: 8 minutes prep, 9 minutes cook

Directions
- Boil pasta (as per package instructions), add salt to water
- Drain pasta and place into a mixing bowl
- Add diced zucchini, red bell pepper, stir gently
- Add remaining ingredients, cover and chill one hour before serving
- Toss gently when plating.
