  • 1/4 tsp coarsely grnd pepper
  • 1 x garlic clove chopped
  • 3 c. cooked long-grain rice
  • 1 1/2 c. diced cooked chicken breast (about 6 ounces)
  • 1/2 c. liquid removed diced bottled roasted red bell peppers
  • 1/4 c. medium pitted ripe olives liquid removed and halved
  • 1/4 c. fresh chives minced
  • 1/4 c. fresh basil minced
  • 1/4 c. fresh oregano minced
  • 1 can quartered artichoke hearts (14-oz) liquid removed

Directions

  1. Yield: 4 servings
  2. 1. Combine vinegar, extra virgin olive oil, pepper, and chopped garlic in a small bowl.
  3. Set dressing aside.
