.%20The%20fact%20is%20though,%20when%20done%20right%20meatloaf%20can%20be%20positively%20delicious%20-%20full%20of%20subtle%20flavors%20and%20offering%20a%20simple,%20rustic%20comforting%20meal%20on%20a%20fall%20or%20winter%20night.%20Its%20not%20something%20I%20would%20make%20often,%20as%20I%20try%20to%20keep%20my%20meat%20eating%20to%20a%20bare%20minimum,%20but%20its%20a%20great%20treat%20every%20now%20and%20again.%3C/p%3E%3Cp%3EThis%20meatloaf%20is%20definitely%20delicious%20-%20just%20a%20hint%20of%20spiciness%20with%20sweet%20rich%20flavors%20like%20balsamic%20and%20red%20wine.%20They%20key%20is%20not%20overwork%20the%20meat%20while%20you%20combine%20everything%20together%20and%20to%20get%20a%20good,%20coarse%20ground%20beef.%20You%20won't%20see%20any%20ketchup%20in%20this%20recipe%20either%20-%20instead%20I%20used%20a%20thick%20potent%20tomato%20paste%20from%20Italy%20combined%20with%20local%20honey.%20It%20is%20to%20die%20for%20fresh%20out%20of%20the%20oven,%20and%20is%20pretty%20amazing%20heated%20up%20on%20a%20sandwich%20the%20next%20day%20as%20well.%3C/p%3E%3Cp%3E2%20Tbs.%20Chipotle%20in%20adobo%20(for%20this,%20I%20take%20one%20of%20the%20little%20cans,%20remove%20seeds%20from%20the%20peppers%20and%20make%20it%20into%20a%20paste%20in%20the%20blender%20and%20keep%20in%20my%20fridge,%20then%20use%202%20tbs%20of%20this%20paste)%3C/p%3E%3Cp%3EFirst,%20marinate%20the%20meat.%20In%20a%20large%20bowl,%20combine%20the%20red%20wine%20with%20the%20ground%20sirloin.%20Season%20liberally%20with%20salt%20and%20pepper.%20Cover%20and%20let%20marinate%20for%20around%2030%20minutes.%20I%20let%20it%20sit%20out%20on%20the%20counter%20while%20I%20prep%20everything%20else%20so%20the%20meat%20can%20come%20to%20room%20temperature.%3C/p%3E%3Cp%3ENext,%20saute%20your%20veggies.%20Heat%20a%20bit%20of%20olive%20oil%20in%20a%20skillet%20and%20add%20the%20carrots%20and%20onions.%20Saute%20for%20around%208%20minutes%20over%20medium%20low%20heat,%20until%20the%20veggies%20soften.%20Add%20the%20garlic,%20sage,%20and%201%20tsp%20each%20of%20oregano%20and%20thyme.%20Cook%20for%20another%202%20minutes%20or%20so,%20until%20garlic%20is%20combined%20and%20fragrant.%20Remove%20from%20heat%20and%20allow%20to%20cool.%3C/p%3E%3Cp%3ENow%20make%20your%20breadcrumbs.%20Take%20about%203%20cups%20fresh%20bread%20crumbs%20and%20season%20with%20the%20basil%20and%201%20tsp%20each%20of%20oregano%20and%20thyme.%20Put%20the%20crumbs%20in%20nonstick%20skillet%20or%20frying%20pan%20over%20high%20heat%20and%20toss%20until%20just%20toasted.%20Remove%20and%20let%20cool.%3C/p%3E%3Cp%3EWhisk%20together%201/3%20cup%20honey%20with%20the%206%20Tbs%20tomato%20paste.%20Now%20everything%20is%20ready%20to%20mix%20in%20with%20the%20meat.%20In%20a%20very%20large%20bowl,%20mix%20the%20sauteed%20veggies,%20the%20honey/tomato%20sauce%20and%20the%20breadcrumbs%20and%20a%20whisked%20egg%20and%20mix%20it%20all%20together%20gently%20just%20until%20combined%20(unfortunately%20using%20your%20hands%20is%20really%20the%20best%20way%20to%20combine%20everything%20with%20the%20meat).%3C/p%3E%3Cp%3EPack%20the%20meat%20mixture%20into%20a%20loaf%20pan%20(if%20it%20doesn't%20fit%20or%20you%20don't%20have%20one,%20just%20shape%20into%20a%20loaf%20on%20a%20baking%20sheet%20covered%20with%20parchment).%3C/p%3E%3Cp%3EWhisk%20together%20the%20honey,%20balsamic%20vinegar%20and%20chipotle%20for%20the%20glaze.%20Pour%20a%20bit%20over%20the%20top%20of%20the%20meat%20loaf%20and%20use%20a%20brush%20to%20spread%20it%20over%20the%20rest.%20Use%20about%203/4%20of%20the%20glaze%20at%20this%20point.%20The%20glaze%20isn't%20super%20sticky,%20so%20it%20may%20drip%20down%20into%20the%20loaf%20or%20around%20the%20sides,%20which%20is%20awesome%20because%20its%20flavor%20:)%3C/p%3E%3Cp%3EPut%20the%20loaf%20in%20center%20of%20the%20oven%20and%20cook%20at%20350%20F%20(180%20C)%20for%20about%201%20hour.%20Remove%20and%20apply%20the%20rest%20of%20the%20glaze%20about%20half%20way%20through%20the%20cooking.%3C/p%3E%3Cp%3ELet%20rest%20for%205%20or%2010%20minutes%20before%20cutting.%20You%20can%20slip%20the%20whole%20loaf%20out%20of%20the%20pan%20or%20just%20individual%20slices.%20There%20will%20be%20some%20juices%20-%20reserve%20them%20and%20spoon%20over%20slices%20of%20the%20meatloaf%20for%20best%20results.%20They%20will%20be%20sweet%20from%20the%20honey%20with%20just%20a%20bit%20of%20spice%20and%20are%20simply%20delicious%20:)%3C/p%3E){kind=link}
