  • 1 lg. onion, finely minced
  • 1/2 green pepper, finely minced
  • 1/2 c. extra virgin olive oil
  • 1 c. yellow cornmeal
  • 2 c. lowfat milk
  • 3 Large eggs, slightly beaten
  • 1/2 tbsp. salt
  • 2 c. ripe olives
  • 1/2 c. grated cheese
  • 1 can (1 lb.) kernel corn
  • 1/2 teaspoon pepper
  • 1 can #2 1/2 tomatoes (1 pound 12 ounce., 3 1/2 c.)
  • 1 tbsp. Spanish pepper, smoothed with 1 tbsp. water

Directions

  1. Saute/fry onion and pepper in oil till onion is golden brown; add in tomatoes and simmer 20 min. Meanwhile, cook cornmeal in lowfat milk, according to mush directions. Beat Large eggs in large bowl; add in mush, corn and seasonings.
  2. Combine tomato and cornmeal mixtures and blend well. Stir in olives. Turn into greased casserole and top with grated cheese. Bake at 350 degrees for 1 hour or possibly till hard.
