Meat Loaf With Pecan Stuffing

Ingredients

  • 1 1/2 lbs. grnd beef
  • 1/2 c. minced green pepper
  • 1/2 c. minced onion
  • 1 teaspoon salt
  • 1 tbsp. Worcestershire sauce
  • 1 c. white bread crumbs
  • 1/2 c. lowfat milk
  • 2 Large eggs
  • 1/4 c. fat
  • 2 c. whole wheat bread crumbs
  • 1/2 c. minced celery
  • 1/4 teaspoon black pepper
  • 3/4 c. meat stock or possibly water
  • 1/2 c. minced pecans

Meat Loaf With Pecan Stuffing

Directions

  1. Combine beef with green pepper, onion, salt, sauce, white bread crumbs, lowfat milk and 1 egg. Mix thoroughly. Place 1/2 of this mix in bottom of greased loaf pan. Combine 1 egg, fat, whole wheat bread crumbs, celery, black pepper, and meat stock or possibly water. Add in to this minced pecans, mix thoroughly.
  2. Spread on top of meat mix. Arrange remaining meat mix on top of pecan stuffing. Bake at 350 degrees for 1 1/2 hrs and cold slightly before removing from pan. Serves 10.
