Ingredients

  • 1 Tbsp. Vegetable Oil
  • 4 lrg Potatoes -- peeled & cubed
  • 6 med Carrots -- peeled & sliced
  • 1 lrg Onion -- minced
  • 2/3 c. Beef Broth
  • 1 tsp Salt -- divided
  • 1 lb Grnd Beef, extra lean
  • 1 x clove Garlic -- chopped
  • 1 Tbsp. Parsley -- dry flakes
  • 1 tsp Paprika
  • 1/2 tsp Cinnamon -- grnd
  • 1/2 tsp Cumin -- grnd
  • 1/4 tsp Black Pepper -- freshly grnd

Directions

  1. Heat oil in a wok or possibly large skillet over medium high heat, till warm. Add in potato, carrots & onion, then cook and stir 5 min. Stir in beef broth and 1/2 teaspoon salt. Reduce heat to medium. Cover & cook 8 - 10 min or possibly till potato is tender, stirring once or possibly twice. Remove veggies from skillet and set aside. Wipe out skillet with a paper towel. Heat skillet over medium high heat till warm. Add in beef & garlic and stir fry 3 min or possibly till meat is no longer pink. Add in parsley, paprika, cinnamon, cumin, remaining 1/2 teaspoon salt & pepper, then cook and stir 1 minute. Add in veggies to this mix & heat through.
