Maw Maw's Oyster dressing Recipe

As a child I remember going to gramdma's for chiristmas dinner, this was a favorite for the entire family.
I dont know where my grandmother learned to cook this dish, but im so glad she did :)

Ingredients

  • 2 dozen oysters with juice ( make sure to keep the juice
  • 4 1/2 to 5 pounds of gizzards grounded ( we get them grounded by the butcher at our local store)
  • 1 small chopper
  • 1 large container of liver grounded (i do this one at home in my small chopper)
  • 4 cups instant rice (cook to box directions)
  • 2 medium bags of seasoning (16 oz each) chopped (total 32 oz)
  • 1/2 cup vegetable oil (for sauted seasoning)
  • salt and pepper to taste
  • while gizzards are cooking down, take this time to grind up oysters (in small chopper) and set back in jucie for later use
  • do the same to the liver chop and set aside in a seperate bowl from the oysters
  • cook rice according to box and cover until ready to mix in meat mixture
  • keep stiring all through cooking not to burn and well mixed

Directions

  1. in a large pot add vegetable oil
  2. let oil get hot, add gizzards and stir and break them up in pot, cook gizzards until you no longer see liquid in pot and starting to get stick in pot
  3. add chopped seasoning
  4. saute until seasoning is mixed well and all liquid is just about gone ( about 15 minutes)
  5. add liver and mix well and let cook (about 15 minutes) make sure the liquid is cooked out (mixture will be soft and juicy for mixing) just not alot of liquid when stiring
  6. add oysters and mix well, once again cook for around 15 minutes and let liquid cook out
  7. turn off fire and let stand for 5 minutes
  8. In the pot of meat mixutre add rice one cooking spoon at a time not to over add rice to make dressing dry ( add to your liking) I like my dressing moist and mixed well with rice so you can see the meat mixture not just rice.
