Ingredients
- 2 C Mashed potatoes
- (My left over mashed potatoes are well seasoned. I am operating on the assumption that yours are too. If not add:
- 1 tsp salt,1/4 tsp pepper,1/4 tsp garlic powder)
- 2 large eggs, beaten
- 3 Tbs pancake mix or flour
- 1/2 C chedder cheese
- 2 Tbs butter

Mashed potato breakfast cakes
Time: 5 minutes prep, 8 minutes cook
Directions
- Place mashed potatoes, eggs and cheese into a bowl
- add pancake mix
- stir together
- Heat pan on stove top, add butter
- When butter is melted and the pan is at about 215* add 1/4 of mix and press slightly with a fork to thin & shape.
- Cook 3-5 min each side on medium.
- Serve with any of the toppings you like best. We like sour cream, chives & bacon.
