Mashed potato breakfast cakes

Ingredients

  • 2 C Mashed potatoes
  • (My left over mashed potatoes are well seasoned. I am operating on the assumption that yours are too. If not add:
  • 1 tsp salt,1/4 tsp pepper,1/4 tsp garlic powder)
  • 2 large eggs, beaten
  • 3 Tbs pancake mix or flour
  • 1/2 C chedder cheese
  • 2 Tbs butter

Time: 5 minutes prep, 8 minutes cook
 
 

Directions

  1. Place mashed potatoes, eggs and cheese into a bowl
  2. add pancake mix
  3. stir together
  4. Heat pan on stove top, add butter
  5. When butter is melted and the pan is at about 215* add 1/4 of mix and press slightly with a fork to thin & shape.
  6. Cook 3-5 min each side on medium.
  7. Serve with any of the toppings you like best. We like sour cream, chives & bacon.
