Directions

  1. Preheat oven to 350 degrees. Grease the sides of a 9-inch springform pan with butter.
  2. In a bowl combine the graham cracker crumbs, almonds, and melted butter till well blended and press into the bottom of the springform pan. In another bowl beat the cream cheese till smooth and creamy. Beat in the lowfat sour cream, mascarpone, Large eggs, sugar, and continue beating till the mix is very smooth, about 5 min. Add in the vanilla and orange juice and beat till incorporated, 1 minute. Pour the filling into the prepared crust, and bake till brown and springy-hard, about 1 1/2 hrs. Allow to cold for 4 hrs.
  3. Meanwhile, combine all coulis ingredients in a small saucepan and cook over low heat for 15 min, allowing it to create its own syrup. Cold and top either the whole cheesecake or possibly individual slices with this topping. Garnish with fresh peach slices, mint and powdered sugar.
  4. This recipe yields 12 dessert servings.
