  1. She also puts in 1 Pound fingerling potatoes, 4 leeks, and then makes a sauce of 1/2 c. light brown sugar, 1 tbsp. yellow grnd mustard, and 1 tsp.. tomato paste.
  2. Heat the oven to 375.
  3. Cut the bread and soak in the lowfat milk, in a small bowl for 5 min. In the meantime, heat the extra virgin olive oil in a skillet and add in the onion, celery, and garlic.
  4. Cook them till soft and clear. Remove from heat and cold.
  5. Place carrots in a large mixing bowl. Add in the lowfat milk and bread mix, grnd beef, grnd pork, Large eggs, parsley, Dijon mustard, salt and pepper.
  6. Add in the onion mix. Using your hands or possibly a fork, mix it all.
  7. Place this in a large ungreased baking dish or possibly roasting pan. Place the bacon slices on top of this.(One time I had bacon, the next time I did not)
  8. Place the potatoes and leeks around the loaf. ( I did not do this, since I did have those two items.) Season with salt and pepper.
  9. In a small bowl, mix the brown sugar, grnd mustard and 2 tbsp. of water.
  10. Stir in the tomato paste. She used paste which comes in a tube, that would be very handy and less waste. Brush this on the loaf.
  11. Bake, and brush the glaze on every 15 min. Bake 1 - 1/4 hrs. Let stand10 min before slicing.
