Marinated Turkey, Red Onion And Tomato Salad In Pita

Ingredients

  • 1 med red onion peeled/thinly sliced
  • 16 x cherry tomatoes quartered
  • 1 1/2 c. leftover cooked turkey coarsely minced
  • 2 c. iceberg lettuce thinly sliced
  • 1/3 c. fresh basil shredded
  • 1 Tbsp. light brown sugar
  • 1/4 Tbsp. fruity extra virgin olive oil salt and freshly grnd pepper to taste
  • 4 x pita bread round cut in half 6 inch

Directions

  1. In a large bowl, toss together the onion, tomato, turkey, lettuce and basil. Sprinkle with the brown sugar and drizzle with the vinegar and extra virgin olive oil. Toss well and season with salt and pepper. Cover and let marinate in the refrigerator for at least 2 hrs.
  2. To make sandwiches, mound the salad mix into the pita pockets and serve at once.
