The onions and avocado make this dish, in my opinion. Very crisp and refreshing. Perfect simple dinner for the beach.

I had a dinner party this weekend with a mexican theme. We had pork carnitas tacos and these onions went very well. It was a large crowd so I made a double batch and there were no leftovers! So easy and fantastic!

I tried to make these a couple of weeks ago. I think I messed up using a tupperware dish instead of a glass making dish. It was still good but never got bright purple :-/ I love these so I will try again.
