Great salad for parties accompanied by warm French or Italian bread chunks.

Ingredients

  • 1/2 medium red onion, finely chopped
  • 1 red bell pepper, chopped
  • 1 cup halved grape tomatoes
  • 1 small cucumber, seeded, chopped
  • 1/2 cup feta or goat cheese crumbles
  • 1/2 cup pitted kalamata olives, or Mediterranean olives
  • Marinade:
  • 1/4 cup extra virgin olive oil
  • 2 tbs. red wine vinegar
  • 1 tbs. fresh lemon juice
  • 1 tbs. each chopped parsley, fresh oregano, and garlic - or, 1/2 tbs. dried
  • salt and pepper to taste

Directions

  1. Toss the veggies with the marinade ingredients. Chill several hours.
  2. Best served room temp.
