Marinated Broccoli & Black Eye Pea Salad Recipe

  • 1 lg. bunch broccoli, cut into sm. pcs
  • Juice of 1 lemon
  • 1 (1 lb.) can black eye peas, drain & rinse
  • 1 med. red onion, cut into thin slices
  • 1 med. bell pepper, minced
  • Red wine vinaigrette

Directions

  1. Steam broccoli over water and lemon juice 5 to 7 min, till tender but still crisp. Remove from steamer and combine with remaining ingredients, tossing to coat well. Cover and chill at least 4 hrs, tossing every so often.
  2. Red Wine Vinaigrette: 1/2 c. red wine vinegar, 2 Tbsp. Dijon mustard, salt and pepper, 1 c. extra virgin olive oil. Combine all ingredients in a bottle, cover and shake well.
