  • 100 pounds corn, frozen
  • 25 pounds onions, chopped
  • 25 lbs peppers, green, chopped
  • 1.5 lbs jalepenos, minced
  • 2 cups salt
  • 4 cups Paul Prudhommes, louisiana spice
  • 3.25 gal heavy cream

Directions

  1. Melt the butter in a large skillet or saute pan over medium-high heat.
  2. Add the corn, onions, bell peppers, jalapeno, PPLS, and salt, and cook, stirring, until soft.
  3. Add the cream and cook for 30 minutes.
  4. Remove from the heat and serve hot.
  5. Hold at 145.
