Ingredients

  • 2 c. Cooked rice
  • 1/3 c. Grated unsweetned coconut
  • 1 1/4 c. Skim lowfat milk
  • 1/4 c. Maple syrup
  • 1 1/2 tsp Cinnamon
  • 2 x Large eggs

Directions

  1. Coat a 2-qt baking dish with nonstick spray, and add in rice and coconut.
  2. In a medium bowl, whisk the lowfat milk, maple syrup, cinnamon and Large eggs, and pour over the rice. Stir to combine.
  3. Bake, uncovered at 325 F till set, 45 to 50 min.
