- 2 c. Cooked rice
- 1/3 c. Grated unsweetned coconut
- 1 1/4 c. Skim lowfat milk
- 1/4 c. Maple syrup
- 1 1/2 tsp Cinnamon
- 2 x Large eggs

Maple Coconut Rice Pudding

Directions
- Coat a 2-qt baking dish with nonstick spray, and add in rice and coconut.
- In a medium bowl, whisk the lowfat milk, maple syrup, cinnamon and Large eggs, and pour over the rice. Stir to combine.
- Bake, uncovered at 325 F till set, 45 to 50 min.
