Maple Apple Baked Beans with Apple Sausage Recipe

Ingredients

  • Begin by soaking in water overnight or up to 48 hours:
  • 1 1/2 pounds dry white beans
  • Saute together until softened but not browned:
  • 4 cloves minced garlic
  • 1 large red onion, finely chopped
  • 3 tbsp olive oil
  • Cook until the onions and garlic are softened, then add along with the drained soaked beans to an oven safe dutch oven or roaster and:
  • 3 cups water
  • 1 cup maple syrup
  • 1/2 cup dark brown sugar
  • 1 1/2 tsp salt
  • 1 tsp pepper
  • 3 tbsp smoked paprika
  • 1 tsp chipotle powder
  • 1 tbsp dried thyme
  • 1/4 cup Worcestershire sauce
  • one 28 ounce can tomato sauce
  • 2 tbsp dry mustard powder
  • 1/4 cup apple cider vinegar
  • 1 1/2 pounds low-fat apple sausage
