It’s a rare rainy day in Southern California, but with wildfires raging near the ocean, I’m grateful for the rain. And let’s be honest, rainy days in SoCal aren’t like the rainy days in other parts of the country, at least most of the time. The ground sometimes will get completely wet, but it’s more of a mist or light sprinkling. And it feels so cold, but really it’s only in the low 60′s! So we aren’t drowning here or anything like that.
To help fight off the “cold” and “wet” weather, I prepared a batch of my sister Monica’s delicious Mango Lime Salsa. There is no cooking involved as with many salsas, and it has really great flavors like fresh lime juice and cilantro paired with the warmth of cumin of jalapeno. There is nothing bad or unhealthy here. It’s just a great mix of springtime flavors. I love the sweetness of mango paired with salty tortilla chips. It’s also a favorite of my most adventurous eater, Baby C.

Ingredients:
1 jalapeno, seeded and finely chopped
- ¼ c. red onion, finely chopped
- 2 T. fresh lime juice
- 2 T. fresh cilantro, chopped
- ¼ tsp. cumin
- ¼ tsp. salt
- ¼ tsp. white pepper
- 2 ripe mangos, peeled, cored, and diced
Directions:
In a medium bowl, combine jalapeno, onion, lime juice, cilantro, cumin, salt, and pepper; mix thoroughly.
Gently fold in the diced mango and stir to combine.
Chill at least 30 minutes to blend flavors. Serve with tortilla chips.
