Mango Chipotle Sauce/Glaze

This is a good sauce/glaze for almost anything. It is easy to make and stores refrigerated well for several days or if air tight much longer. I use it on grilled fish, chicken or pork. It can be used hot as a finishing sauce or cold as a glaze during the last few minutes of grilling. Adjust the chipotle peppers to your taste.

Ingredients

  • 1 cup mango nectar
  • 3/4 cup dry white wine
  • 6 oz dried mango pieces, chopped (I used Trader Joe's)
  • 1/4 cup sugar
  • 1/4 cup lime juice
  • 2 Tbs chipotle peppers in adobo sauce, pureed (or to taste)
  • water to thin if necessary

Directions

  1. Combine all the ingredients in a heavy saucepan. Bring the mixture to a boil. Reduce heat to low, cover and simmer until mango pieces are very tender and the liquid reduces slightly, about 30 minutes.
  2. Cool the mixture. Puree the sauce in a blender until very smooth. Add water if necessary to reach consistency you desire.
  3. Use now or refrigerate for use later.
