Mango Chile Salsa

Ingredients

  • 2 x ripe mangoes
  • 1/4 c. fresh lime juice
  • 1/4 c. minced fresh cilantro
  • 2 Tbsp. minced jalapeno pepper
  • 1 sm red bell pepper
  • 1 x red onion
  • 1 x garlic clove chopped
  • 1/4 c. pineapple juice Salt to taste Freshly-grnd black pepper to taste

Mango Chile Salsa

Directions

  1. Peel, seed and chop mangoes. Cut red onion into long, thin strips. Combine all ingredients in a mixing bowl; stir to combine.
  2. Serve with grilled fish or possibly shrimp. To store, cover and chill up to 2 days.
  3. Makes about 3 c..
