Directions

  1. Put the washed tripe in a large saucepan.
  2. Cover with cold water and add the salt.
  3. Place over a medium-high heat and bring to the boil. Reduce the heat to low and simmer till tender.
  4. Drain well, reserving 4 tablespoons of the cooking liquid. and set aside.
  5. Put the oil, onion, garlic and ginger in a saucepan large enough to eventually take the tripe.
  6. Place over a medium heat and fry until lightly golden, stirring occasionally.
  7. Reduce the heat to low.
  8. Add the spices, tomato purée, tamarind and bay leaf and simmer for 10 minutes.
  9. Stir in the reserved cooking water and add the sliced tripe. Simmer for 20 minutes, stirring occasionally.
  10. Add salt to taste.
  11. Serve very hot with plain rice.
