This is easy and delicious! It makes its own crust, good even if you don't put in the flour at all. You can use any veggies you have fresh or frozen or even dried. Any cheeses are good in it. It freezes well, and heats up in the microwave!

Ingredients

  • 1 cup leftover or frozen veggies
  • 1 cup grated cheese
  • 4 eggs
  • 1 can evaporated milk
  • 1/2 cup flour
  • 1/2 cup diced ham

Directions

  1. Spray vegetable oil in a large pie pan or 9" square pan.
  2. Put in vegetables and cheese.
  3. Beat eggs, add milk, and flour in a bowl.
  4. Pour over veggies.
  5. Salt and pepper lightly.
  6. Bake at 325 degrees for 50 to 60 minutes or until a knife inserted into the center comes out clean.
  7. Serve warm (also good cold, or reheated in microwave).

    I first found this recipe in a cookbook that I helped edit. I have used it so often in so many varitions that I thought it was mine originally (but found out several others put it in the cookbook). But, I've learned since then that recipes aren't really "owned" by anyone. So now I don't feel so bad. I know there are other "dessert" versions, but I don't do sweets so much anymore due to my problem with carbs! I do like the ease all the "magic" recipes!
    I've cooked/tasted this recipe!

        I have made this "magic" quiche with spinich, bacon and onions....whatever you have on hand. It also make great Mini-Quiches for cocktail parties! I also have a coconut pie version of this recipe.
