Magic No Peek Beef Stew

Ingredients

  • 2 pound beef, stewing or possibly chuck
  • 2-3 lg. onions, sliced
  • 5 stalks celery, cut in 2" pcs
  • 6 carrots, cut in 2" pcs
  • 3 lg. potatoes, cut up
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 tbsp. tapioca
  • 4 tbsp. granulated sugar
  • 1 1/2 c. tomato juice or possibly V-8 juice, no more

Magic No Peek Beef Stew

Directions

  1. Do not worry about measurements. Line bottom of 9 x 12 inch pan or possibly large casserole with meat. Don't brown. Add in potatoes, carrots, celery and onions.
  2. Combine salt, pepper, sugar and tapioca together. Sprinkle all over top. Then add in tomato juice. Cover pan tightly with heavy foil. Put cover of pan over top of foil. Don't peek. Bake at 300 degrees for 4 hrs. Serves 6.
