Ingredients
- 2 cups sugar
- 4 eggs
- 1 cup oil
- 2tsp vannila essence
- 2 cups flour
- 2 tsp baking soda
- 3 tsp cinnamon
- 1 tsp salt
- 3 cups raw grated carrots

Maggie's simple Carrot Cake
Time: 15 minutes prep, 40 minutes cook
Servings: 6
Directions
- Preheat the oven to 325 degrees F/Gas mark 5
- Prepare a baking bun pan by dusting in flour
- In a large bowl, beat the sugar, eggs, oil and vanilla together until smooth
- stir the dry ingredients together
- Add them in to the egg mixture slowly stirring constantly
- fold in the carrots
- Bake in the prepared pan for 40 minutes or until ready(When a fork put through comes out clear)

Summary
This is the simplest Carrot cake and yet the tastiest i have made, best for breakfast because it is easy and quick to make. The cinnamon makes all the difference!
